Summer #Simplyfied with Tasty Grilling Sides – Hash brown Casserole {#Recipe}

Our family is a huge fan of hashbrown casserole, in fact, I cant think of a single meal when, to us, hashbrown casserole wouldn’t be a proper side dish.  Grilling out is no different.  When we’re invited to a cook-out or just fixing dinner for the family, you will often find hashbrown casserole on the menu.  Last month, just in time for grilling season, Simply Potatoes sent me two free Simply Potatoes coupons to make our favorite grilling side dish with…well, it wasn’t hard for us to decide which recipe to share with you guys.

Y’all know I love (love, love, love) my grandmother’s recipes.  I mean you’ve seen them half a dozen times (from chocolate chip banana bread to her famous pink salad), so it should be no surprise that today’s recipe also comes from her…with just a few adjustments of our own.

Now, I love Simply Potatoes (they’re a product we regularly use in the house) because there is no hassle of washing, peeling, slicing and dicing the potatoes and the kids (and Jon) love the real potato texture and taste (because they ARE real potatoes).

Hash brown Casserole {Recipe}

Ingredients

  • 2 cups shredded cheddar cheese
  • 1 10 3/4-ounce can of condensed cream of chicken soup
  • 1 dairy sour cream
  • 1/2 cup finely chopped onion
  • 1/2 cup finely diced garlic (not in Mommaw's recipe)
  • 1/4 cup unsalted real butter, melted
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 20-ounce bags of Simply Potatoes shredded hash brown potatoes
  • 1 cup crushed potato chips
  • 1 tablespoon unsalted butter, melted

Instructions

  1. Preheat your oven to 350 degrees.
  2. Grease a 13x9x2 inch baking dish and set aside.
  3. In a large mixing bowl, combine shredded cheese, chicken soup, sour cream, chopped onion, diced garlic, 1/4 cup melted butter, salt and pepper. Mix well.
  4. Fold in the hash brown potatoes, carefully.
  5. Turn the potato-cheese mixture into the prepared baking dish.
  6. Toss together the potato chips and 1 tablespoon melted butter; sprinkle over potato mixture.
  7. Bake at 350 for about 1 hour or until casserole is golden brown and potatoes are tender.
  8. Serve with burgers and a house salad.
