If you’re in search of an easy recipe for baked chicken and quinoa, look no further.  This is our go-to meal when we need to get dinner on the table without a lot of effort.  Highly nutritious, quinoa cooks up fast and delicious with a slightly nutty flavor.  The slightly spicy baked chicken recipe adds the perfect kick of extra flavor in this recipe.

Serve with salad or your favorite steam veggies to complete the meal.

Baked Chicken and Quinoa

Quick, healthy, and delicious baked chicken and quinoa recipe.

Ingredients

    Chicken:
  • 4 Chicken Breasts (thawed)
  • 2 cups Chicken Broth
  • 1 1/2 tsp. Mrs. Dash Salt-Free Garlic & Herb
  • 1 1/2 tsp. Mrs. Dash Salt-Free Extra Spicy Seasoning Blend
  • 1 1/2 tsp. Onion Powder
  • 1 1/2 tsp McCormick Garlic Bread Sprinkle
  • Quinoa:
  • 1 cup dry Quinoa
  • 2 cups Chicken Broth
  • 1 TBS butter/margarine

Instructions

    Chicken:
  1. Preheat your oven to 375 degrees.
  2. Place thawed chicken breasts in a large 9x11 pan and cover with broth.
  3. In a small bowl, mix your dry seasonings; sprinkle mixed seasonings over breasts and in broth.
  4. Cover pans tightly with aluminum foil and bake for 30-45 minutes or until chicken has reached 180 degrees.
  5. Quinoa:
  6. Bring broth and butter to boil in a 2 qt. sauce pan.
  7. Add Quinoa and bring to a boil.
  8. Reduce heat to medium and simmer for 12 minutes or until quinoa has absorbed all the broth.
  9. Fluff with fork.
  10. Serve both with steamed vegetables for a quick and delicious meal.
